Day One- In the Books

Day one is officially behind us.

We woke up with anticipation of what the day would hold. I stumbled out to the kitchen and pressed the button on the coffee-less coffee maker (we drink unsweetened tea now…that’ll wake ya up). Maura made us some eggs over easy while I chopped up some avocado. We also had some fruit that we had chopped up the day before on our prep day.

After breakfast, I threw us together a spring mix salad with balsamic vinegar chicken (again, prep day!), tomatoes, and hard-boiled eggs for lunch. Maura also made us a delicious homemade dressing that she filled me a mason jar to put in my fridge at work.

I made a mistake and didn’t pack myself anything to snack on throughout the day, so by the time I got home we were both a little bit starving to death. So, we pulled out some fresh tilapia we had purchased on Sunday, and Maur cooked it up while I made us some sweet potatoes and a small side salad.

The best news? I haven’t counted a single calorie, logged a single meal, or stressed about my carb intake. Because I know everything that I’ve put into my body today has been fresh, healthy, and from the earth, not a chemical plant. Here’s looking at you, Monsanto.
The cravings are going to be the most difficult part to get past, I can tell. I suspect I may, like most of the world, have a slight sugar addiction. Skittles, Starbursts, Sour Patch Kids…get in my belly. But we’re learning to overcome these cravings and addictions with things that are good for our body, like fruit.

I’ll be the first to tell you that I think Whole30 is a little extreme. I can’t even have honey in my tea to make it a little more bearable? No peanut butter, either? But maybe that’s what we need. The first step is the hardest, right? On to the next.
